The season of lower temperatures, fallen colorful leaves, tea, shorter days, snuggling in blankets and of course autumn recipes has arrived. I think autumn cannot pass without at least one recipe with pumpkin, it is great for both sweet and savory dishes, and you can even find it in drinks. In order to give my all to autumn recipes, and first of all to this food, I made a salad in which pumpkin is the main ingredient…
This autumn salad is a mix of textures and flavors and showcases the best of fall.
If you like to try new flavors, this is a must-try salad!
INGREDIENTS:
- 200 g Orza
- 400 g hokkaido pumpkins
- 200 g Brussels sprouts
- 1 žličica honey
- 150 g feta cheese
- ½ purple onion
- 1 medium-sized apple
- 1 handful of chopped coriander leaves
- 30 g of pumpkin seeds
- Olive oil
Spice mix for pumpkin and Brussels sprouts (mix all ingredients):
- 1 ½ a teaspoon of salt
- ½ teaspoons of chilli
- 1 teaspoon of granulated garlic
- ½ teaspoons of nutmeg
- 1 spoonful of chopped thyme
DRESSING:
- 3 spoons of maple syrup (you can replace with 1-2 spoons of honey)
- 3 spoons of olive oil
- 1 teaspoon of Dijon mustard
- Juice of half a lemon
- 1 a teaspoon of salt
- 1 garlic
- Pepper and chilli as desired
PRIPREMA:
- Boil water and cook the orzo according to package directions, drain when done and set aside.
- Heat the oven to 200℃.
- Line two trays with baking paper. On one side, mix the diced Hokkaido pumpkin with the prepared spice mixture and olive oil. On another tray, mix the halved brussels sprouts with the already mentioned spice mixture, olive oil and honey. Bake the pumpkin for 35 minutes and the Brussels sprouts for 25 minutes.
- To prepare the dressing, mix the listed ingredients in a jar, shake well until everything is combined and set aside.
- In a large bowl or on a larger tray, add orzo and top with roasted pumpkin and Brussels sprouts, onion and apple cut into half moons, coriander, pumpkin seeds and crumbled feta cheese. Pour the dressing over the salad and mix well.
- Serve chilled or warm, it all depends on you!
